This allows us to avoid washing the olives. Washing the olives harms the oil that will be obtained for several reasons: the olive swells with water, the water harms the phenols in the oil, there may be microorganisms that pass through the water to the olives and the oxidation process is accelerated.
It cannot be forgotten that in the autumn, unlike most farmers, we no longer throw chemicals on the tree, in fact, we only throw copper in the spring. Therefore, since the olive appears on the tree, no chemicals are thrown on it. If anyone is afraid that the olives, if not washed, could carry any dirt, they should bear in mind that at the end of the oil extraction process the paste is centrifuged at many revolutions and thus the oil is separated from any impurities that may be present. After harvesting the olives with the vibrator, the olives are transferred to a trailer that has a grid with small holes to sift the olives and remove any small branches and some leaves that may be present.
Next we move on to the mill. Here the first step is to separate the olives from the leaves that have remained.
This is done with a blower that makes the leaves fly away and the olives, being heavier, fall. This process is a little dirtier and for this reason we do it in the reception area outside, in front of the mill.
Then the olives are taken to the mill. There the first step is to pour them into a knife grinder. This grinds everything and turns it into a paste.

Cinc turoperadors alemanys coneixen l’oferta cultural del Pirineu
Visiten l'Alta Ribagorça, el Pallars Jussà per valorar si inclouen el Pirineu en els seus paquets turístics
REDACCIÓ. (Lleida).- Cinc turoperadors alemanys han visitat el cap de setmana passat les l’Alta Ribagorça i el Pallars Jussà, a més de les Garrigues, el Segrià i l’Urgell per conèixer l’oferta turística d’aquestes comarques. Alemanya és el tercer mercat internacional que més visitants aporta a la demarcació de Lleida (només superat per França i Països Baixos) i l’objectiu del viatge ha estat que els participants coneguin la cultura i la gastronomia del Pirineu i la plana per tal que valorin la possibilitat d’oferir paquets turístics que incloguin les comarques de Lleida
Els turoperadors han realitzat diverses activitats, com una d’oleoturisme al molí d’Oli Cometes de la Pobla de Cérvoles, una visita a la Seu Vella de Lleida ciutat, i a les esglésies romàniques de Sant Climent de Taüll, Sant Joan de Boí i Santa Eulàlia d’Erill la Vall, que formen part del conjunt de temples declarats Patrimoni de la Humanitat per la Unesco.
També han fet una ruta de senderisme pel Parc Nacional d’Aigüestortes i Estany de Sant Maurici, concretament pel Planell d’Aigüestortes i l’Estany Llong. Després s’han desplaçat fins al Pallars Jussà, on han visitat Licors Portet de la Pobla de Segur i la canònica de Santa Maria de Castell de Mur.
A l’última part de l’estada, es turoperadors alemanys s’han traslladat a l’Urgell, on han visitat el monestir de Santa Maria de Vallbona de les Monges i el celler l’Olivera de la DO Costers del Segre.
El viatge, que ha portat per títol ‘Lleida, destí de cultura i gastronomia’, ha estat organitzat pel Patronat de Turisme de la Diputació amb la col·laboració de l’Oficina Espanyola de Turisme (OET) de Frankfurt i els consells comarcals.
